I really like the majority passages which are read at a slow, steady pace, with expression and changes of pitch for speech or punctuation. Having studied the passage, I can then listen to the Polish without text or translation and understand what is being said.
Some passages are read closer to the speed at which Polish people usually speak, making it more difficult to understand without following the text at the same time. Is this difference in speed a deliberate policy?

No, this difference is not deliberate even thought we try to slow down a bit some people are more or less successful there 😀 But I think this variety is a good thing. Yes you will need to spend more time on the lesson but later it will be easier to understand original content.
